Sollip Welcomes New York Restaurant Jua To London For a Four-Hand Dinner

On 4th April, for one night only, Michelin-starred restaurant Sollip will host an exclusive dinner in collaboration with New York’s award-winning Korean restaurant Jua. The evening will celebrate the friendship of the two chefs, Hoyoung Kim of Jua and Sollip’s Woongchul Park, as well as the shared culinary heritage that runs through their dishes.

Throughout the evening, Londoners will be offered a glimpse of their respective Michelin-starred menus, which combine classic and forward-thinking techniques with the distinct flavours and ingredients found in Korean cuisine. In an ode to their native cuisine, the chefs will immerse the guests in their distinct culinary tradition, revitalised through a modern perspective. A collaborative nine-course tasting menu will include signature dishes from each restaurant, with highlights including:

Gamtae Sandwich 
Caviar Kim   
Jook – Squab, Smoked Eel, Morel   
Daikon Tarte Tatin
Black Pain Perdu
Sweet Potato Jooak 

Hoyoung Kim and Woongchul Park met when they first moved to Europe from their native Korea, Hoyoung settling in Paris and Woongchul in London. Blending international approaches with Korean ingredients, their shared perspective of modern Korean cuisine has evolved through times spent in some of the world’s most prestigious kitchens, with Hoyoung spearheading the rise of Jugsik in New York and Woongchul honing his skills at The Ledbury and Koffmanns.

Woongchul Park says:

“With this collaboration, Kim & I will come together in showcasing how we approach Korean cuisine in our own way. With this dinner, we’ll aim to show the vision we share of Korean culinary culture through dishes we believe best represent the cuisine of our country. It is with immense honour that we welcome Jua to London and also look forward to going to New York later this August to repeat the experience.”

A bespoke wine pairing will be available on the night showcasing some of Sollip’s most carefully curated cuvées mostly sourced from France with some originating from greater Europe. A signature soft pairing will also be available and can be ordered on its own or combined with the wine pairing offering diners a half-serve. The evening’s celebrations are to start with a glass of sparkling unless guests opt to try the soft on option; Royal Flush Sparkling Tea, emblematic of the spring flavours of Korea.
